So today is brew day! Got the day off and have an Oat NEIPA to brew up. Also have been trying to culture Belgian yeast and mixed it with recovered yeast from my last Saison. I realise that the bottled Belgian yeast maybe specifically for bottles, but nothing ventured...

Bottled 41 bottles with #endeavourhop today. The aroma was of blackcurrant and berries. Very strong too. Was in the dry hop with Citra and Cascade but those two were very much in the background. Looking forward to using this for bittering and flavour in my next brew.

Excited to get my first Endeavour hops from @homebrewhops Just put a little into my British Golden ale as a dry hop addition this time. I plan to use these more heavily in my next brew a New England IPA which should showcase them better.

And maybe...without a cooling system/ Fermentation chamber I need to work with the climate and my equipment and just brew Belgian ales in the summer. I know those yeasts like a bit of heat and I can provide that. I just can't chill down to 18c at the moment.

Finally pitched yeast into my latest brew. Took 36 hours to come down to pitching temps. Reasonably happy that it went below 79c rapidly due to addition of 6 litres of chilled water and 2 litres of tap water...but it took a long time to come down the rest of the way...

Brewed up a British Summer Golden Ale yesterday. 20 litres of the good stuff. It will be sessionable at 4%. British malts and oats with US hops (cascade and citra). Still waiting for it cool enough to pitch the American ale yeast. I like the lack of esters. Old Golden Hen-a-like?

One week in the bottle. A Saison ale, but quite frankly it tastes just like a Belgian Blonde ale. Very happy with the way it has turned out and it is only young and will get better with age. You really can make decent beer at home.

So, one of the great things about brewing your own beer is that you get to design the beer too. My next beer is a British Golden Summer ale. Light in colour and refreshing with a citrusy zing...that's the plan anyway. Brew day is Saturday, weather depending.

Tried my latest brew, a Saison, last night. I shouldn't have. It wasn't ready, but I didn't want to drink the last bottles of my other brew. So, I opened the Saison. I can't tell you it was a Saison (I need to try one) but I can say it was Belgian. Think a deeper Leffe Blonde.
