I used double pen box size games in most of my sessions last season and saw alot of benefits both in respect to the principles being coached but also a huge increase in attacking outputs (and creativity) when it came to match day

If you are going to go to the trouble to create a highlights video to show coaches; first of all remember highlight videos show only "good" things in the main, often with no context. I'll be more inclined to watch games if I am honest, rather than 3 second clips.
