@jimrosecircus1 Those are ripe. They're just white eggplant not purple. Two different varieties of the same plant.

@jimrosecircus1 White and purple eggplants are their own colour when babies or ripe and also there are many striated varieties. An orange coloured sicilia one is particularily good too.

@jimrosecircus1 That’s hilarious in that white is the original colour of eggplant before cross breeding happened. It’s why they’re called “eggplant” in English. Original name is Arabic #Battenjain😉 Artichoke in Arabic is called “Arth-El-Chowki” whichs translates to “prick of the ground”

@jimrosecircus1 I grow various eggplant. Purple eggplant start out purple. Those are Japanese white eggplants.
@jimrosecircus1 I think the Brits DEF have us on this one by using the far, FAR more elegant (and yes French;) “aubergine”. Mwa! What a pretty word. Then we go “eggplant!” Yuk. Just think: “aubergine Parmesan”. Yum!!!!

@jimrosecircus1 Just a white variety, some are green, various shades of purple to almost pink, striped and even an orange variety. Also come in a variety of shapes and sizes, ranging from small round to long and skinny besides the shape that is most common in western markets.

@jimrosecircus1 Lots of eggplant varieties; true to color at "birth" & "ripe". Pick, prepare at any stage, but be mindful that if one gets away from ya, it w/be seedy. Let one ripen after picking the others, harvest seeds for next year. The plants are better acclimated after growing seed.
